Guest guest Posted December 8, 2005 Report Share Posted December 8, 2005 Oatmeal Cookies From " The Peaceful Palate " 1 cup unbleached or whole wheat pastry flour 1/2 teaspoon cinnamon 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup sugar or other sweetener (I used maple syrup) 1/3 cup vegetable oil 1/4 cup molasses 1 teaspoon vanilla 1 1/2 cups rolled oats 1/4 cup soy milk or rice milk 1/2 cup raisins 1/2 cup walnuts, chopped (optional) I have also added 1/2 cup coconut or 1/2 cup chocolate chips Preheat the oven to 350 degrees. Mix the flour, cinnamon, baking soda, baking powder, and salt in a large bowl. In a seperate bowl, mix the sugar, oil, molasses, and vanilla until smooth. Add the flour mixture, along with the rolled oats, soy or rice milk, raisins, and optional walnuts/coconut/chocolate chips. Mix well. Drop rounded tablespoons onto an oil-sprayed cookie sheet, leaving room for the cookies to spread. Bake until lightly browned, 12 to 15 minutes (I find 10-12 minutes to produce a moister cookie).
