Indian Bulgar Pilaf

 

 

 

1 cup Bulgar

 

1 cup Veggies diced

 

(Potatoes,beans,carrots

 

Peas)

 

1 Onion chopped

 

2 serrano chiles diced

 

1/2 tsp. turmeric

 

1/2 tsp. ground cumin

 

1/2 tsp. mustard seeds

 

Salt to taste

 

1 tablespoon Oil

 

2 cups Boiling water

 

Parsley chopped for garnish or cilantro

 

 

Add the bulgar to boiling water, cover & set aside.

Heat oil, saute onion, chiles and spices for 3 minutes.

Stir in veggie and salt. Cover,cook on low flame for 10 minutes.

When veggies are done, mix in bulgar ,adjust seasonings.

Garnish with parsley & Enjoy
