Guest guest Posted December 7, 2005 Report Share Posted December 7, 2005 Peel it, slice in thick matchsticks and sprinkle lime or lemon juice over it and then a dash of chili powder. LA style. You can dice it and toss in with your salad, just peel and eat. It won't become starchy like a potato if you add to cooked dishes or while a soup is boiling. If the skin is maked up that's normal.
