what to do with beets? Erin

Erin if you like onions, cut the onions in large pieces and sear the beets in

the pan.e delicious. You can par steam the beet since they are so hard and then

sear in the pan. I use my iron skillet doe this.

I'm a BIG beet fan....Happy to hear how much you enjoyed them. Now I will

have to try the tops since I'm into greens right now.

buttery. The beet itself was rather tasteless, so I tried a few

Tonight I roasted the second beet with some butternut squash,

brussels sprouts, onions, and garlic. Yummy! (Also had a little

raw, which was good too). For the last beet, I might try stir-

frying it with something or searing it in a pan. But, the roasted

veggie medley is definitely something I'll repeat (every veggie is

good roasted!) and the greens are delicious.
