Everything balances out with the dried mustard and the sugar. I say if in doubt with the hot spices just cut in half and mix then sprinkle a little bit on a cooked potato and see what you think. You're so welcome. I can't give you an exact amount of shakers it fills. I usually fill a jar for my older nephew, one powdered sugar shaker for my self and fix a few smaller shakers up. Men really love this stuff so I always make a double batch at times. I save small jars during the year to use, most of the small jelly jars have plain lids and the labels soak right off. I make a gift basket up and toss a shaker of this in there too. I cover the shaker lid with a circle of saran wrap and tie ribbon around it. If you want to replace a little of the chili powder with achiote powder that works well also.
