Hope you find something to your liking. (:- ) Donna Eggplant Caviar One med. eggplant One Tbs. vegetable oil One clove garlic, pealed and crushed One med. onion, diced Two med tomatoes, chopped Three radishes, diced One cucumber, diced One tsp. lemon juice Salt and pepper Wrap the eggplant in aluminium foil and bake in a 375 degree oven for one hour. Unwrap it. Let it cool. Once cooled, peel and chop it. Heat oil. Saute onion and garlic over low heat, until tender. Mix tomatoes, lemon, radishes, cucumber, and shakes of seasonings into the onion and garlic. Cook for three to five minutes. Add eggplant, cooking for five more minutes. Chill. Makes a fun hors d'oeurve served with crackers, or on a lettuce as part of your meal. " Let the sound take you away.
