Peanut Butter Chip Fruit Bars

 

1 1/2 cups peanut butter chips, divided

1 pkg cream cheese, softened

1 cup light brown sugar, packed

1 egg

1 tsp vanilla extract

1 cup all purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup quick cooking oats

1 cup chopped dried mixed fruit, or

dried fruit bits

1 cup powdered

2 tbsp orange juice

1/4 tsp freshly grated orange peel (optional)

 

Heat oven to 350 F. Grease and lightly dust with flour a 13 x 9 inch baking

dish. Place 1 cup peanut butter chips in a microwave-safe bowl. Microwave at

high 100% for 1 minute. Stir. If necessary, microwave an additional 15 seconds

at a time. Stir after each heating, until chips are melted and smooth when

stirred. Beat melted peanut butter chips and cream cheese in a large bowl until

well blended. Add brown sugar, egg, and vanilla. Blend well. Stir together

flour, baking soda, and salt. Add to cream cheese mixture. Blend well. Stir

in the oats, remaining 1/2 cup peanut butter chips and dried fruit. Spread

batter in prepared pan. Bake 20 to 25 minutes or until golden brown. Cool in

pan on wire rack. Meanwhile, stir together powdered sugar, orange juice, and

grated orange peel in a small mixing bowl. Blend until smooth. Add additional

orange juice, a teaspoonful at a time, if glaze is too thick. Pour over bars

and cool completely. Cut into bars. Yield: about 24

bars depending on size cut.
