Fresh ones? Take a sharp knife and carefully cut an x or a slash in

the flat side. Roast them in a 400*F oven for 15 or 20 minutes.

Peel the shell & skin off and enjoy... :-) The go great with sweet

potatoes, they were in the cornbread stuffing that I had in SF....

they're often put in sweet things.

 

I think you can boil them too, but I've never done that.
