Guest guest Posted November 30, 2005 Report Share Posted November 30, 2005 Lentil and Greens This dish is yummy and looks great in the dish 8 oz dried lentils 1 bag frozen collard greens 5 cups of veggie stock or broth 3 carrots thinly sliced in processor (or by hand) 1 large onion cut in half and sliced 1/2 head of garlic 5 tbs. soy sauce 3 tbs. maple syrup, or sugar 4 tbs curry powder 1 tsp. turmeric 2 tsp. Maesri green curry paste (the canned kind in vegetarian), or you can use hot sauce, just adjust it to taste. I use the curry paste. rice of your choice lemon juice to taste, preferably lemon wedges. green onions (scallions) to taste optional: 1 tablespoon yeast flakes bring stock or broth to a boil, add lentils, bring to another boil and turn down to simmer for 10 minutes. add the rest of the ingredients except yeast flakes, simmer with lid tilted for one hour. Add yeast flakes if desired. you really don't taste them much in this recipe, I do it for nutrition, you can even add a tablespoon of flax seed, ground that is, as well. pour over rice and top with some chopped scallion pieces. Squirt a little lemon juice over top, and you can garnish with lemon wedges. This is so good and so nutritious. This recipe makes a big pot.
