polenta??? Hi Paul

Yes, polenta is Italian and is cooked up cornmeal. The recipe I posted

creates a mush, like mashed potatoes, but it can then be put into any

type of greased pan, loaf, cookie sheet, etc to set and then sliced

and baked or fried. It is very versatile and is delicious with a

tomatoe-based sauce. It is a great substitute for potatoes or pasta.

 

The recipe I posted can easily be halved. Did you see the recipe? Here

is it again, this makes a lot:

 

2 c yellow cornmeal

2 c cold water

4 c veggie broth

 

Pour cornmeal into a medium sized bowl and add the cold water,

stirring constantly. Bring the veggie broth to a boil in a large

saucepan, slowly add the cornmeal mixture and stir constantly with a

wooden spoon. Turn heat down to medium low. Use back of spoon to break

up any lumps. Cook until the polenta is thick and slowly falls off the

spoon, about 15-20 minutes.

 

It is now ready to eat or you can set it as mentioned above and then

slice it to bake or fry.
