polenta???

Can you tell me what polenta is? I never heard of it before.

It sounds like an Italian word but I don't know for sure.

If I make it from the recipe do you eat it for dinner and put other stuff on

it?

Thanks for any help with this new type of a food to me.

It is.. also known as corn grits; if you see those in the store they

will work just fine.

 

I know lots of people cook it soft (like cream of wheat or porridge),

then top with cooked greens'n'garlic... DH likes that. However, my

favorite thing to do with it is cook it up, spread it in a lightly

oiled pan, and pop in the fridge to set up. When firm, cut in

triangles and broil just so the edges are getting browned, then top

with whatever you'd put on bruschetta - chopped tomatoes, garlic,

olives, roasted peppers, goat cheese...
