Hi Lee. Thank you for sharing this recipe. i think

i own all of Linda McCartney cookbooks. Every recipe

i have tried from them i have enjoyed. Which one is

this recipe in?

It is interesting to see how she moved from being

lacto-ovo to vegan over the years she was vegetarian.

The cookbooks are all so lovely in presentation, too.

Linda McCartney's Oh-bla-di Enchiladas recipe

 

I picked up her book from the library last week and made these. Very

good recipe. I doubled it for the family.
