Latkes/Lawanna

Being Jewish I of course have a latke recipe. Used many years. A little

different but still kosher. <smile>

 

2 small white potatoes

2 small carrots (I like the baby carrots and so I would use 4 of those)

1 medium onion

 

Grate all of the above. Drain. Squish the water out, or wring it, how ever you

want to term it, but get the excess moisture out. I use the food processor for

the above. If you grate it is a different texture than if you grate and chop it

with the bottom blade too. You'll have to try and see which one you like. The

grated ones cook slower, but have more texture, the grated and chopped ones have

less texture but do cook faster. I like them both so you have to try it and see

which you like. You could do a batch and do half one way and the other half the

other way. When we do them at a large Hanukkah party we do the grate and chop in

order to get them out fast. You can keep them warm in the oven too.

 

Mix the potatoes, carrots, onion with:

 

2 whole eggs (for vegan substitute 1/4 cup of silken tofu, that is the kind in

the unrefrigerated box)

1 1/2 tsp baking powder

1 tsp salt

1 1/2 TBSP Flour

 

Fry in hot oil until brown and done on both sides. (taste test) Drain on paper

towels. Keep oil hot or you will get some greasy latkes.

Makes six latkes

Serve with the traditional applesauce or sour cream (have both to serve)

 

Of course you can double, triple, etc too.

recipe request to the group

 

 

Has anyone got a good potato latkes recipe? I didn't see one in our files,

and I sure don't want to attempt one from a cookbook. Everything I make

from the recipe files seems failproof.
