I was dropping off things at the thrift shop yesterday and found this mint condition book for 50 cents. I had to make this recipe with Chanda's leftover sauce. So good, I took the balance to the neighbor. I would have eaten too many. " Cranberry Apple Muffins " 1/2 cup whole cranberry sauce 1/2 tsp. finely shredded orange peel 1 1/2 cups all purpose flour 1/2 cup sugar 1 tsp. gr. cinnamon 1/2 tsp. baking soda 1/4 tsp. baking powder 1/4 tsp. salt 1 egg, beaten 1/3 cup milk (I used soy) 1/3 cup vegetable oil (I used canola) 1 cup shredded peeled apple Grease twelve 2 1/2-inch muffin cups or line with paper bake bake cups. Preheat oven to 375 degrees. In a small mixing bowl stir together cranberry sauce and orange peel. In another bowl stir together flour, sugar, cinnamon, baking soda, baking powder and salt, and blend. Make a well in the center. In a 3rd bowl combine egg, milk and oil. Add all at once to the dry mixture. Stir just until moistened ( better will be lumpy), fold in apple. Spoon batter into prepared muffin cups filling each 2/3 full. make an indentation in the center of each with the back of the spoon, Spoon 2 tsps. full of cranberry mixture into each indentation. Bake in a 375n degree oven for 18 to 20 minutes or until golden brown. Cool in muffin cups on a wire rack for 5 minutes. Then remove muffins from muffin cups. Serve warm or room temp.
