What do I cook with this? Cathrine

Well let's see here. I would peel and dice the butternur squash and roast it in

the oven with your favorite spices sprunkled over it. Steam the beets and

potatoes. I think this would make a wonderful vegetable salad.

Toss the roasted squash with beet and potato cubes, chopped onion, a squeezed

garlic clove with either a balsamic dressing or with vegenaise mayo and some

dried mustard, red pepper flakes and salt.

How does that sound?

After I sent that I forgot about the sunchokes. I eat those on the side like my

sister Sissy, lemon or lime just and a little chili podwer. I also diced finely

and toss in salads.
