I wouldn't touch it since it looked moldy, steamed it and grated it in a few things I posted and it was great. It is very strange and you really don't crave it as far as I can see but it did turn out wonderfully in my recipes. I'm a tofu fan also. It's so versatile. I've seen recipes calling for seitan but no instructions on where to buy it or how to make it. I've tried tempeh and I do enjoy it. Have you eaten tempeh?
