I've seen recipes calling for seitan but no instructions on where to buy it or how to make it. I've tried tempeh and I do enjoy it. Have you eaten tempeh? It has a good texture I think and the flavor just depends on what you simmer it in, whether or not you bread it and the sauces you use with it. One of our local markets makes it and I think that a couple of the last times I bought theirs it was over date...it is in their open deli case...it had an off taste and a little slimy I think. I think that stuck with me. I'll try it again later.
