Guest guest Posted November 22, 2005 Report Share Posted November 22, 2005 Make sure to get a few extra sweet potatoes. These are the perfect treat to have with Thanksgiving leftovers. Sweet Potato Patties 1 1/2 lbs sweet potatoes or yams (either one) 2 tsps. canola oil 1/2 tsp. salt dash of each, pepper & nutmeg 1/4 cup hot soy milk or milk 1/2 cup chopped pecans 1/2 ground pecans Preheat oven to 425 degrees Boil sweet potatoes until tender, drain and cool. Peel sweet potatoes and mash well with fork or potato masher. Add salt, oil, pepper, nutmeg, and milk, beating until light and fluffy. Stir in chopped pecans and shape into 6 to 8 flat round patties. Dip both sides of patties into ground pecans to coat. Place on lightly oiled baking sheet and dot with butter. Bake in a preheated oven of 425 degrees for about 15 to 20 minutes.
