I have been vegetarian in the past and I'm going to give it a try again. I know it is the right choice for me both physically and spiritually. It is not so easy to stick with it when you live in a land of meat eaters and a husband who won't give it up. My 8 year old son is also interested in eating vegetarian. I look forward to exchanging lots of recipes and nutritional information. Here's one of my favorite recipes. Stuffed Mushrooms 16 ounces of any type of mushrooms 2 inches or larger. I like portabella. 4 ounces cream cheese 6 ounces PepperJack cheese 1/2 cup seasoned breadcrumbs Break the cheese up into chunks. Place cheeses into a microwave bowl. Heat in the microwave until melted. Add breadcrumbs and stir. The mixture should be like sticky PlayDough in consistency. Add more breadcrumbs if necessary. Remove the stems from the mushrooms. Stuff the cheese mixture into the caps. Place on a lightly oiled cookie sheet. Bake at 350 degrees until the mushrooms are soft about 15 minutes.
