Portobello Pizzas Vegetarian

 

INGREDIENTS

8 4-inch Portobello mushrooms

Olive oil

1 1/2 cups prepared marinara sauce

1/2 finely diced onion

1/2 cup finely diced bell pepper

1/2 cup sliced black olives

1 1/2 cups grated mozzarella cheese

DIRECTIONS

Preheat oven

to 350 degrees.

Wipe mushrooms with a damp paper towel. Cut out stems and

use a spoon to scrape out the dark gills. Brush mushrooms with olive oil and

place them cap-sides down in a jelly roll pan.

Spoon about 2 tablespoons of marinara sauce into each

mushroom cap.

Add onions, bell pepper, olives and the remaining marinara

sauce. Top with grated cheese.

Bake until cheese is melted and pizzas are heated through,

about 10 to 12 minutes.

Serves eight.
