Guest guest Posted September 22, 2003 Report Share Posted September 22, 2003 Portobello Pizzas Vegetarian INGREDIENTS 8 4-inch Portobello mushrooms Olive oil 1 1/2 cups prepared marinara sauce 1/2 finely diced onion 1/2 cup finely diced bell pepper 1/2 cup sliced black olives 1 1/2 cups grated mozzarella cheese DIRECTIONS Preheat oven to 350 degrees. Wipe mushrooms with a damp paper towel. Cut out stems and use a spoon to scrape out the dark gills. Brush mushrooms with olive oil and place them cap-sides down in a jelly roll pan. Spoon about 2 tablespoons of marinara sauce into each mushroom cap. Add onions, bell pepper, olives and the remaining marinara sauce. Top with grated cheese.
