Guest guest Posted September 6, 2003 Report Share Posted September 6, 2003 As promised, here's the recipe my wife sent me, taken from Fit for Life, with her comments on straining, etc. You can sub the papaya for other fruit; strawberry is another good one. We use, here in Brazil, the smaller bananas that are sweeter, so if you use those humongous things they ship you in the U.S., might use one less than called for ... Vicki doesn't use the maple syrup, and there is no need for sweeting since the fruit itself lends such a wonderful sweet taste to the shake. Beats a milkshake hands down! Randal http://random.antville.org Fresh Almond Milk: 1/4 cup raw almonds 1 cup cold water 2 teaspoons pure maple syrup (optional) Blanch almonds by adding them to large skillet containing 1/2 inch boiling water, allowing them to sit in water as it boils for about 30 seconds. The skins will loosen noticeable. Drain and pop skins off. Place blanched almonds in blender with 1 cup cold water. Run blender at high speed for 2-3 minutes until a thick white milk has formed. If you are going to drink almond milk straight, strain it through a fine sieve. If there is a lot of pulp, you have not blended long enough. If you are going to use the milk in a shake, there is no need to strain. I usually strain the milk even though I am going to use it in a shake at least three times.
