Veggie Fajitas

Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 1 tablespoon olive oil 4 cloves garlic -- minced 1 onion -- chopped 2 green bell peppers -- chopped 1 red bell pepper -- chopped 1 yellow or orange bell pepper -- chopped 1 tablespoon chili powder 1 teaspoon ground cumin 2 tomatoes -- chopped 8 whole wheat flour tortillas

 

In a large skillet, cook garlic, onion, and peppers until crisp-tender. While stirring, sprinkle with seasonings. Add tomatoes and cook until tomatoes are heated through. Spoon vegetable mixture onto heated tortiallas.
