Chickpea Patties

Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 1 can garbanzo beans -- or 1 1/2 cups cooked 3 tablespoons olive oil -- divided 1/4 onion -- diced fine 1 stalk celery -- diced fine 4 cloves garlic -- minced 1/2 cup bread crumbs -- or more if needed 1/3 cup brewer's yeast -- nutritional 1 teaspoon worcestershire sauce -- vegetarian 2 tablespoons gluten, wheat 1 teaspoon dried parsley 1/2 teaspoon dried thyme 1/2 teaspoon dried marjoram pinch dried sage 1/2 teaspoon salt 1/4 teaspoon black pepper

 

Drain garbanzo beans (chickpeas) and place in food processor fitted with steel blade. Pulse a few times to coarsely chop beans--do not puree. Remove to a large mixing bowl; set aside. Heat 1 tablespoon oil in a small skillet and saute onion and celery, stirring constantly, until tender. Add garlic and saute 1 minute more. Place onion mixture in bowl with garbanzo beans. Add remaining ingredients and stir well. Shape mixture into six patties (about 1/3 cup mixture per patty). Heat remaining 2 tablespoons oil in a large skillet over medium-high heat and cook patties 2-3 minutes on each side or until crispy and nicely browned.
