Mandarin Almond Salad

I always make this salad to take to family gatherings, as I'm the only vegetarian and it serves as a great main dish with the nuts and greens. This salad is truly delicious and everyone always wants the recipe.

 

The term "evaporated cane juice" refers to whatever degree of natural sugar you like to use from turbinado, organic sugar or Florida crystals, to Sucanat or Rapadura. The darker and less processed are more healthful, but impart a molasses flavor to the dish/baked good. You could, of course, use standard white sugar in it's place if you don't have a natural variety (some vegetarians avoid all white sugar because it may have been filtered with animal bone char--whereas evaporated cane juice products are not filtered this way).

Mandarin-Almond Salad

Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- Salad: 2 heads green leaf lettuce -- rinsed, drained and torn 1 bunch green onions -- sliced 2 cans mandarin oranges -- drained Almonds: 1 cup slivered almonds 1 tablespoon Better Butter (half butter/half oil) 3 tablespoons evaporated cane juice Dressing 1/2 cup apple cider vinegar 1/2 cup canola oil 1/4 cup evaporated cane juice 1 teaspoon salt dash pepper 5 drops hot pepper sauce

 

Prepare salad greens and put with onions and mandarins in a large bowl. In a small skillet, melt Better Butter and sprinkle evaporated cane juice into pan. Add almonds and cook over medium heat, stirring constantly, until toasted, lightly browned and well-coated. Remove from heat and continue stirring until mostly cooled. In a small jar with lid, combine dressing ingredients and shake well. Just before serving, add almonds to salad greens. Shake dressing well and pour over salad, toss to coat evenly.
