I am keeping this mind when ever I meet someone who is new or wanting to start being a vegetarian. Vegetarian cookbooks geared towards teenagers or young college kids I found were the best. "The students Grub guide" I think is what one is called "Vegetables Rock" is another, also "The Teens Vegetarian Cookbook" (Judy Krizmanic -- happen to have that one next to me :0)....there really are many out there. There were many very simple recipes in them....and it introduced me but didn't overwhelm me with "new" foods like tofu. Once I started getting a hang onto some of the "new" foods....I graduated to other cookbooks but cookbooks that were still geared towards simplicity like a cookbook I own called "convenient vegetarian" and "Meatless Meals for working people".....after that .....I started getting into an occasional extensive recipe....but generally, I still like keeping it simple. Check out your local library....I found it to have a wealth of resources when it comes to vegetarianism...it helps save lots of money instead of buying books and it gives lots of ideas...and of course groups like this one can be invaluable!
