As for the soy sauce posing a problem, the amount would be pretty small per portion I would use, so I would take a chance on that...I just wouldn't eat large amounts of it during a day...

(but, I sure miss my old lunch habit of steamed tofu with spinach... *sigh*...)

This recipe for seitan showed up in a newsletter I got just yesterday, one using wheat flour. Would the soy sauce pose a problem for you?
