It's nice to know someone is managing diabetes with a <nearly> vegan diet. My hubby was diagnosed almost two years ago and my father is in a nursing home because of diabetes-related strokes at the age of 57 (he's 60 now, but has been there for three years now). It's a topic that is close to my heart and probably partly responsible for my own dietary changes quite a few years ago. My hubby, however, hasn't made the switch, eating meat outside the home (lots of it, too, even though he's seen great results the two times he committed to meatless eating for weeks at a time) while he enjoys my very vegetarian cooking at home. I am a from-scratch cook, so I make my own bread, tortillas, sauces...anything really...but that's not necessary. You can find many convenience foods like dry whole grain pastas and canned beans (rinse to remove salt) in most health food stores to save these steps and still turn out wonderfully satisfying and nutritious vegetarian foods. I write an article (and recipes) each month entitled "Vegetarian Living" in a four-perspective weekly newsletter (some of the weeks aren't vegetarian, focusing instead on allergies or living on a budget). If you click on "Getting Started" it will give you some ideas. Also, I'll post some of my personal favorite recipes (the ones that qualify as "quick" <G> and easy) here over the next few days. If you give me an idea of your favorite types of meals and things you manage your diabetes with best, I can be more specific to your needs.
