Pesto, as you all probably already know, can be made up to the oil-adding stage (if I remember right), then frozen. I plan to freeze some this weekend. Again, many thanks. Recipe: 1 cup any cold-pressed natural oil 1/2 cup natural apple cider vinegar, organic if possible 4 Tbs. cup Golden Mark apple vinegar (which is made in China and is sweet, rather than vinegary) -OR- 2 heaping Tbs. of cane sugar, if the Golden Mark apple vinegar is not available To this add any or all of the following to taste: sweet red paprika 1/8 tsp of black pepper bay leaf granulated or powdered garlic dried parsley basil thyme Peppercorns Whatever other spices and herbs appeal to you.
