The original called for the use of chicken broth, but I found no problem switching that ingredient with a nice rich vegetable based broth. Only takes 20 minutes at the most to make, so it fits the " quick recipe " bill perfectly! Cream of Basil Soup 3 cups vegetable broth 1 cup minced fresh basil 1/4 cup margarine or butter 3 Tbs all-purpose flour White pepper to taste 3 cups milk 1/2 cup sour cream In a saucepan, simmer broth and basil, uncovered, for 15 minutes. In another saucepan, melt butter. Stir in the flour and pepper until smooth; gradually add milk, stirring constantly to keep smooth. Bring to a boil; cook and stir 2 minutes until mixture begins to thicken. Reduce heat; slowly stir in broth and sour cream (do not boil).
