Mango Coconut Vinaigrette

Hi Everybody,

 

I am always looking out for vinaigrettes and other salad dressings. I

came across this one. It sounds delicious, but I am allergic to Mangos and my

friend is allergic to coconut.

 

If anyone tries this, please let me know what you think. OK?

 

Mango Coconut Vinaigrette

 

INGREDIENTS

3 cups mango chunks

2 cans coconut milk

2 cups rice wine vinegar

2 fresh limes, juiced

2 teaspoons minced garlic

4 Serrano chiles, seeded and minced

1/4 cup fresh basil, chopped fine

1/4 cup fresh cilantro, chopped fine

1 red bell pepper, diced fine

DIRECTIONS

Blend the

mango, coconut milk, rice wine vinegar, lime juice, and garlic until

smooth. Add remaining ingredients and pulse briefly (just to

combine). Serve at room temperature.
