Zucchini recipes

Help -

Someone at work gave dear hubby a ton of zucchini. One was almost 3

feet long. Made zucchini lasagna out of that. Thats where my

creativity ends. Does anyone have any " different " recipes. Spicy is

ok too. The zucchini is too large to make pickles out of or my

problem would be solved.

Mine aren't very different but I do shred the zucchini and put it in my

salad. It's great that way. Otherwise I just slice up in rounds and cut in

half to sauté with tomatoes, onions and garlic as a side dish. I'm not a

good cook so I also use the leftovers to put in a whole-wheat pita as a

sandwich. My husband slices it long and grills it.

I don't personally have any recipes for zucchini, but I recommend you check

out www.allrecipes.com . It allows you to search for recipes by ingredient

and also allows you to specify vegitarian-only recipes. If that weren't

great enough, it also allows users to rate recipes out of 5-stars, so you

can get a good idea of how the recipe is before you try it out!

In the " Files " Section of this group, under " Dinner Pies " there is a

recipe for our favorite Zucchini pie that you might enjoy. You might

find some others too, actually there's a pretty good archive of

recipes.

Sorry. That's " Files " , then select " Main Dishes " , then

select " Dinner pies " .

Grate the zucchini, add a grated carrot, onion, an egg and flour to bind then drop by tablespoon into hot skillet and fry like you would a potato pancake

I'd also look at www.foodtv.com (Food TV's site.) They have > 23000 recipies on their site.

A couple of things I have done with zucchini:

 

Sauté chopped zucchini with chopped and peeled yellow summer squash and

onions

 

Make ratatouille (rat – ah –TOO –ee), a French eggplant stew:

 

Saute a couple of onions and green peppers, and a couple cloves of

chopped garlic

Saute a couple of zucchinis, sliced

Saute slices of eggplant

Mix the sautéed ingredients with sections of fresh tomato (used to peel

them, don’t even bother any more), chopped fresh parsley, and salt and

pepper to taste. Heat a few minutes to combine juices.

 

Can be served hot or cold.

 

Another idea is zucchini bread. Don’t have a recipe at my fingertips.

Does anyone on the list have a good one?
