Hello Everyone!

 

I am patting myself on the back for firing up the grill this past

Sunday. I loaded it up with mushrooms, onion slices, red peppers,

asparagus, broccoli, sliced potatoes (about an inch thick sliced

lengthwise so they won't fall through as easy, and even a couple of

whoile garlic bulbs!! I brushed olive oil on..just enough to keep

from sticking, and cooked up a big Mess O' Veggies!

 

I covered for a while, to get the good onion and garlic flavors

throughout. The grilled potatoes have an excellent flavor..even

my " junk food " Hubby likes them!

 

When the mushrooms are cooked, save the juice in a separate

dish..it's great for flavor.

 

I used all kinds of combinations of the veggies through the week. I

made veggie wraps, and a veggie pizza (It didn't need cheese...it

was delicious!).

 

The best idea I had for a snack was taking some of the roasted

garlic cloves, mashing them up, and spreading them on toasted french

bread with the roasted peppers and some mushroom juice over top!!

Some wild lettuce is good on this too.

 

Of course it is a good idea to invite your Significant Other to

enjoy the garlic as well, so you won't offend! :0)

 

Now I am trying to devise more creative veggie ideas....maybe a

veggie tart??
