Potato Hash

 

3 large potatoes, diced

1 cup onion, chopped

1 cup green pepper, chopped

1 cup red pepper, chopped

1 cup corn kernels

1/2 cup celery, diced

1 t thyme

1/2 t tarragon

lemon pepper to taste

olive oil

 

Cook diced potatoes in salted water (or vegetable broth) until tender and

drain.

Cook corn kernels in water 15 minutes, add salt and cook a few more

minutes. Drain.

 

In a large cast-iron skillet, combine onion and celery and stir fry for a

few minutes, until onion becomes transparent.

Add peppers and cook over medium heat for about 10 minutes.

Add potatoes to skillet and cook until potatoes begin to turn golden.

Season with thyme, tarragon, and lemon pepper.

Add corn. Cook until corn is heated through.
