> INGREDIENTS (3 dozen)

> 3 Tbsp vegetable oil

> 4 cloves garlic, crushed

> 1 large onion, finely chopped

> 1 large carrot, grated

> 1 green pepper, finely chopped

> 1-1/2 tsp. dried basil

> 1 tsp. ground fennel

> 3/4 tsp.dried oregano

> 2 large eggs

> 1 cup bread crumbs

> 3/4 cup walnuts, very finely chopped

> 1/4 cup fresh parsley

> 2 Tbsp. Dijon mustard

> 1 1/2 Tbsp. sesame oil

> 1 Tbsp tamari soy sauce

> 3 firm tofu cakes

> black pepper

> PROCEDURE

> (1) Preheat oven to 350 deg. F.

> (2) Saute the garlic, onion, carrot, pepper, basil,fennel and oregano

> oil for 10 minutes or until tender.

> (3) In a large bowl, beat the eggs, then add all other ingredients

> the tofu.

> (4) Mash the tofu and add it to the other ingredients.Mix well.

> (5) Form the mixture into 1 1/2-inch balls. Spread on a greased baking

> sheet.

> (6) Bake for 20-30 minutes at 350 deg. F or until golden brown.
