Guest guest
Vegetable Wrap with Curry Jerk sauce This sauce is my favorite...I use this " Jamaican Dread Jerk Sauce " . It's great! No MSG, and all natural. I found it at my bulk food store. But, if you need to substitute for it, a horseradish grain mustard would be fine. You can use the vegiies raw and snappy, or sear them off for a minute..keeping them al dente'. Sauce: 2 tbsp Vegganaise (sp?) you can substitute 3/4 cup olive oil, 2 tsp. vinegar and a dab of plain yogurt. (Vegan - no yogurt) 1 tsp " Jamaican Dread Jerk Sauce " 1 tsp. Thai Kitchen brand Green Curry Paste (I use this in everything!!) Filling: 1 stalk celery chopped fine 1/4 cup your favorite olive (I used green on this one) 1/8 cup capers 1/2 of one carrot, shredded fine 1/8 cup nuts (pistachios are best, cashews good as well) 1/4 cup chopped fresh red onion 1/8 cup chopped fresh red bell pepper Baby and Leaf Lettuces ************************* Warm your tortilla or Lavash over a gas stove flame. If you have electric, heat with no oil a couple of seconds on each side in a skillet to take the chill off. Spread the sauce on the tortilla, and sprinkle with veggie goodies. Fill with lettuce and roll. For the adventurous, a dash hot sauce to make it even spicier. The curry paste gives it a medium kick.
