Guest guest Posted February 26, 2003 Report Share Posted February 26, 2003 Wow! tasty Pasta Salad 2 cup diced fresh mushrooms 1 cup diced olive (green, calamata, black olives or your favorite mixture) 3 cups pasta 1 tbsp. chopped sundried tomato (Be careful not to chop mushrooms or tomatoes too small, or they will fall through colander.) 3/4 cup mayo* 1 tsp. dill 1 tsp. caraway 1 tsp. herbal seasoning (contains dill, marjoram,garlic, oregano,red pepper) 1/2 tsp. garlic 1/4 cup capers 3/4 cup chopped celery 1 tsp. horseradish 2 tsp. lime juice 1/8 cup chopped onion 2 tsp. mustard Boil mushrooms, pasta and sundried tomatoes together. When pasta is cooked, drain all in colander. While draining, combine remaining ingredients in bowl. Add colander items and toss. Chill one hour before serving. * If you don't do mayo, you can substitute 3/4 cup olive oil, 2 tsp. vinegar and a dab of plain yogurt. Or you can use vegganaise and a dash vinegar.
