As previously suggested, I really like it with a thick tomato-based broth vegetable soup. When I was 18 yrs old I was first introduced to couscous by a roomate who used it in a Morrocan dish. It was made with chicken but I like to duplicate it by using some of the fake chicken stuff, peas, and steamed or grilled squash, zucchini, onion, and pepper. I looks pretty if you mix the peas in with the couscous and then serve the fake chicken and veggies on top. My boyfriend really likes making the couscous out of a box that's flavored olive oil & garlic. He serves it with Gardenburger's riblets and a side or two of veggies. Don't know if you're familiar with the riblets, but they taste very much like b-b-q pork.
