Guest guest Posted February 6, 2003 Report Share Posted February 6, 2003 Hoppin John THE SAUCE 1 28 ounce can diced tomatoes 1 tablespoon basil 1 tablespoon oregano 1/2 teaspoon pepper salt to taste lemon juice to taste 3 garlic bulbs (or to your taste) olive oil saute garlic in olive oil. add the rest of the ingredient. simmer for 25 minutes. The topping layer with black eyed peas, onions (raw/white or yellow), green peppers (raw), and cheddar (looks prettiest in that order) makes 2 big servings or four small servings.
