I've got to serve something on Friday and am tired of cheeseballs and nachos. Robin in NC I made this for a superbowl party and they all went in less than an hour: French bread tomato sauce spinach mozzarella cheese Slice the french bread into 1/4" slices and toast for 10-15 minutes. Take the spinach (cooked) and add to tomato sauce. Put a little sauce on the bread, then the spinach and top with shredded cheese. cook until cheese is melted. sorry it's not more professional but it's off the top of my head and I'm sure everyone has made pizza before. Title: Aubergine Caponata 2Keys: Appetizers Vegetables Italian Italy European Mediterranean Yield: 8 Servings---------------------Ingredients:1 lrg Aubergine2 & nbsp;1/2 cup Onions, sliced2 cup Marinara sauce2 tbl Sugar1/2 tsp Salt12 x Pitted green olives, sliced1/2 cup Olive oil1 cup Celery, diced1/4 cup Wine vinegar2 tbl Capers, drained ds Pepper Toast roundsMethod:Wash aubergine , cut 1/2" cubes. In skillet , saute aubergine in 1/2 c olive oil until tender and golden brown. Remove aubergine and set aside.In same skillet, add 2 T of oil and saute onion and celery until tender, about 5 minutes. Return aubergine to skillet, stir in tomato sauce , bring to boil. Reduce heat and simmer covered for 15 minutes. Add vinegar , sugar, capers , salt , pepper , and olives simmer covered stirring occaionally for an additional 20 minutes.Cover aubergine, refrigerate overnight.
