Spiced Jasmine Rice and Sweet Potato Cakes Yield 24 A great treat for breakfast with scrambled eggs; for lunch with a salad; or for dinner with a fish or chicken entree! 2 cups uncooked, A Taste of Thai Soft Jasmine Rice - 500ml 2 tablespoons canola oil - 30ml 1 tablespoon A Taste of Thai Red Curry Base - 15ml 1 tablespoon roughly chopped garlic - 15ml 1 tablespoon peeled and roughly chopped ginger - 15ml 1 bunch scallions, roughly chopped - 1 bunch 2 medium carrots, roughly chopped - 2 1 teaspoon salt - 5ml 1 16 ounce can sweet potatoes, drained - 1 450g can 2 eggs - 2 1 cup plain bread crumbs - 250ml Prepare rice according to package. When done, set aside. In a large nonstick skillet, heat oil over medium high heat. Add Red Curry Base. Cook until dissolved, about 3 - 4 minutes. In a food processor fitted with a metal chopping blade, process garlic and ginger until very fine. Add scallions and carrots to processor and process to a medium fine texture. Add vegetables and salt to the Red Curry Base. Stir until almost soft. Add cooked Soft Jasmine Rice and mix together well. Pour into a large bowl and allow to cool a bit. Add sweet potatoes to food processor. Process until smooth. Add eggs to sweet potatoes. Mix again until well incorporated. Pour the sweet potato mixture into the rice mixture. Mix together well. Measure out 1/4 cup (60ml) of mixture. Flatten with a metal spatula and shape into a patty. Place patty in bread crumbs and turn making sure all sides are covered. Repeat until all mixture is used. Using a griddle or nonstick frying pan, heat a small amount of oil over medium high heat. Cook patties until golden brown on each side. I know they had cooked the rice first but it was pressed into patties and marinated and then fried and they were delicious. They called them cakes but they were more like a potatoe patty sort of. But they did not call them potatoes, they were like Yams, I think? If that is of help. I have not made them but have tasted them a few times and they were really good. This gives me a base to build on no matter what I can always keep experimenting if its not quite what I am trying to find but I wasnt even sure where to start.
