Guest guest Posted January 15, 2003 Report Share Posted January 15, 2003 Here's a recipe that I got from the Land O' Lakes "Fast-Scratch Vegetarian" pamphlet. I've made them a LOT, because they're SO easy and SO good. Here ya' go: 3/4 C. water 1 (1 oz-1.5 oz) package fajita seasoning packet 1 medium (1 C.) onion sliced thinly 1 (15.5 oz) can pinto beans, rinsed & drained 1 (15 oz) can black beans, rinsed & drained 1 (11 oz) can kernel corn with green & red peppers 6 (10 in) flour tortillas Suggested Toppings: cheese lettuce salsa sour cream 1. Combine water & fajita seasoning in a 10 inch skillet. Cook over medium heat until it boils. 2. Add onion and cook until softened (5-6 mins) 3. Add beans & corn & heat through 4. Heat flour tortillas and assemble with toppings, roll up and dig in!! ____________________ Storms notes: I've added about 1/2 C cooked rice to the bean mix & loved it. You can also add zucchini squash, yellow squash, whatever you like. Also, I like using jalapeno cheese or pepper-jack cheese to give them a kick....either way, these are just plain awesome! Enjoy!
