Guest guest Posted January 14, 2003 Report Share Posted January 14, 2003 Grilling veggies is great. Grill peppers, onions and garlic before making salsa. Grilling pineapple is quite yummy. You can make some sort of sweet glaze to brush on. Here's a little recipe for you I used to cook all the time when I first jumped into vegetarianism. Veggie Enchiladas: Purple onion, sliced into rings 1 zucchini, sliced lenth wise, then halved 1 red bell pepper, sliced into rings 1 can diced green chilies handful of smoked cheese (or not, if you're vegan) 1 can green enchilada sauce about 10 corn tortillas (I prefer white corn) Grill all veggies until nice lines appear and you can definitely smell them. Preheat oven to 350. Rub a little enchilada sauce on the bottom of a baking dish. Arrange a layer of tortillas (try not to overlap too much), then place zucchini and onion, then a little more sauce, then another layer of tortillas, then the bell pepper and green chilies, a little more sauce, then remaining tortillas, then remaining sauce and top with cheese. Bake, covered, for about 45 minutes. Of course, you can play and use whatever veggies you prefer (or add to these).
