Guest guest Posted December 30, 2002 Report Share Posted December 30, 2002 Joe's Broccoli Salad4 servings1 can Goya kidney beans, rinsed well under cold water, dried well and keptin a big bowl3 whole broccoli12 cherry tomatoes, cut in half1 medium yellow onion, peeled and finely chopped12 stems of parsley, pick off the leaves and finely chop themTo prep the broccoli remove the flowerets and peel the stalks well with aknife to remove the "bark". I usually throw away the flowers because theflavor and texture from the stalks have so much more delicious! Cut thestalks into equal pieces the size of a kidney bean. If using theflowerets, use only half and separate them into bite size pieces. Steamthe broccoli over salted water. Have ready a sheet tray/baking dish inthe freezer to use to stop the broccoli from cooking when they are "aldente". Using ice water to stop the cooking will just wash away theflavors and make them soggy. When the broccoli is cool put them in thebowl of beans and keep this in your refrigerator. Put the chopped onioninto a fine strainer and run cold water over them. This will make theonion less aggressive by washing away the sulfuric acid. Dry the onionswell and put them in the bowl with the broccoli. Add the parsley andtomatoes.Tangy oil and vinegar dressing, this will make more then you need Tangy tome is would be some kind of citrus zest so try this.2 tablespoons Tropicana orange juice concentrate1/4 cup sherry vinegar3/4 cup Canola oil, Only use canola oil that is marked "expeller phassil"from Hain or Spectrum.When rapeseed is processed to make canola oil, other methods than"expellerphassil" use chemicals that can give the oil a flavor like burning rubber.Sea salt, just a pinchWhite pepper, from a millMix this all together really well, some kind of blender or hand blender isbest to emulsify this, and pour a little into the salad while mixing.
