Stuffed Mushrooms 18 large mushrooms 2 Tbs olive oil 1 Tbs lemon juice 2 garlic cloves, minced 1/3 cup walnuts, chopped 1/3 cup bread crumbs Gently pull the stems out of the caps and set them aside. Dip the mushroom caps into the lemon juice and place them stem side up, snugly fitting together in the dish. Dice the mushrooms stems. Sauté them with olive oil and garlic until the garlic turns golden. Stir in the walnuts and the bread crumbs. Remove from heat. Spoon the mixture into the mushroom caps, sprinkling any extra on top.
