Guest guest Posted December 18, 2002 Report Share Posted December 18, 2002 I have a recipe for lasagna that uses homemade tomato sauce and no meat, but uses real cheese, so if she is a strict vegetarian she may not eat dairy, but if your daughter is lacto ovo you can use the following recipe: 1.5 boxes of lasagna noodles (I use the Ronzoni no bake lasagna, other no bake noodles I find are not very good, try these or you can try whole wheat or spinach lasagna noodles that you have to cook until just tender before baking). 1 large container of part-skim Ricotta cheese 1 12 0z package of shredded mozzarella cheese 1 egg No meat tomato sauce You can add: sliced mushrooms, thin-sliced eggplant, shredded carrots and/or zucchini Cook lasagna noodles until just tender, unless no bake brand beat egg in a dish and fold in Ricotta until incorporated You may add some salt and pepper or crushed parsley if desired In a rectangular pan, put enough sauce to cover bottom of pan and then a layer of noodles layer Ricotta mixture, shredded mozzarella, veggies and dribble sauce over each layer and then repeat until pan is full or ingredients are gone, top with layer of noodles covered in sauce and sprinkle with parm cheese or shredded mozzarella if desired. Cover pan with foil. Bake at 350 degrees for 50 minutes. Uncover in last 10 minutes of cooking time. If your daughter does not eat dairy, try the Vegan recipe. Good luck!
