This has meant that I have had to find a whole new reportaire *laugh*. We had this one for tea a few nights ago, and it was really nice. I have a tub of it in the freezer which should be fine but I don't know for sure yet. ASIAN NOODLE SOUP - 370 calories per serve - 6 substantial bowls. 2.5 liter vegetable stock (the recipe says 1.5 but I misread it - this works well) 6 spring onions, sliced 2 tbs fresh grated ginger 2 cloves garlic crushed 1 red chilli, finely sliced 8 dried shitake mushrooms, soaked in hot water until soft and sliced (I only had ordinary ones, so I used them) 2 tbs soy sauce 1 tsp sesame oil 2 tsps lime juice (I put more than this in and the pulp from juicing a number of limes - too much, perhaps, but more than this worked) 1 tsp brown sugar(because of the too much lime, I used 2 teaspoons - I don't think it would do any real harm to the calorie content) 1 small carrot cut into sticks (I used 2 and added 2 handfuls of green beans - shouldn't have done too much damage) 300 g firm tofu, cut into cubes 440 g udon noodles Place stock in a large saucepan, bring to boil and add all ingredients except tofu and noodles. Simmer for 5 minutes Add tofu and noodles and simmer for a further 5 minutes until heated through. Serve with extra shredded spring onions sprinkled on top. Changing the Serving Size: This soup freezes well without the tofu and noodles.
