Vegan product rave & sweet potato fries recipe

Had a great vegan meal the other night that every1 loved. Thought I

would share..

Tried the new Gardenburger Riblets and I think they are just out of

this world. I heated the riblets in the oven and fixed them on buns

like i use to 'real' bbq: mustard, lil bbq sauce, & dill pickles. The

sauce that comes w/ the riblets is really good, but there isn't

enought of it. For a side we had sweet potato oven fries (low-fat!!)

 

Sweet Potato Oven Fries

2 sweet potatoes

Cooking spray

1 Heaping Tbs of Olive Oil

1 tsp salt

1/2 tsp pepper

1/8-1/2 tsp garlic powder (optional)

 

Pre-heat oven to 450 degrees. Clean the sweet potatoes and cut into

desired wedge size. I cut each sweet potato in half and each half

into 8 wedges. Spray well with cooking spray a casserole dish or pan

covered with aluminum foil. Place sweet potatoes in dish/pan. Pour

olive oil over potatoes and mix to evenly coat. Sprinkle salt,

pepper, & garlic powder on potatoes. Mix well. Cook for 15 minutes.

Stir, and then cook for another 15 minutes. Check to make sure they

are a little crispy on the edges or look darkish on the edges. Take

out of the oven and sprinkle more salt over them while still hot.

 

Note: I'm sure margarine or butter could easily be substituted for

the oil. I really liked the wedges with the garlic powder in that it

seemed to compliment the natural sweetness of the potatoes. However,

the wedges made without the garlic powder tasted wonderful too.
