Here is a recipe, orginally with chicken but I substituted with tofu. Very quick and easy. TOFU COUSCOUS 1 - 13 3/4 oz can vegetable broth 1 cup couscous 1 Tbsp olive oil 1 package of firm tofu cut into bite-size pieces 3/4 tsp ground cumin 2 Tbsp lemon juice 3/4 tsp salt 1/4 tsp black pepper 1 small red pepper, seeded and cut into strips 2 scallions, sliced In small saucepan over high heat, bring broth to boil. Add couscous, cover, and remove from heat. Let stand 5 minutes. Meanwhile, in 10-inch skillet, cook tofu in hot oil over med-high heat, stirring frequently, until browned. Stir in cumin; cook 1 minute. Remove from heat and stir in lemon juice, salt, and black pepper. In large bowl, toss tofu, red pepper, and scallions. Add couscous and stir. (You can put the couscous on top on the tofu mixture and let stand for a few minutes. That way the veggies have a chance to " cook " slightly from the heat.)
