They pile their flour in a big bowl, make a well and add the lard and buttermilk and stir with their hands, always maintaining a nice soft workable dough. To me it is an art. My husband's family thought I was crazy when I was taking pictures of his mother making biscuts and dumplings. Oddly, they had a rich buttery flavor to them yet they contain no butter. Yummy indeed.Oat Pancakes1 cup quick cooking oats1 cup flour2 Tbs sugar2 tsp baking pwdr1 tsp salt2 eggs, lightly beaten1 1/2 cups milk1/4 cup vegetable oil1 tsp lemon juiceIn a mixing bowl, combine oats, flour, sugar, baking powder, and salt. Make a well in the center. Combine eggs, milk, oil, and lemon juice; pour into well and stir until just moistened. Pour batter by 1/4 cupfuls onto hot griddle; turn when bubbles form on top of pancake. Cook until second side is golden brown.
